Delicious Chickpea "Tuna" Salad

It's summer and I'm officially only eating this until it cools down.


Summer is here and it's hot hot hot, this means it's time for delicious, cooling salads to satisfy our taste buds. This chickpea tuna salad is seriously one of my favorite meals. You can make it in batches and keep it in the fridge, it's super easy to meal prep, and you can eat it on sandwiches, salads, or as is. Who needs to eat animals when you can make an incredible salad out of chickpeas, am I right?


Let's get to it.


Ingredients:

  • 1 15oz can of chickpeas

  • 2 tablespoons vegan mayo

  • 1 large carrot, chopped

  • 1 large celery stick, chopped,

  • 1/4 onion, diced

  • 2 pickles, diced

  • 1 teaspoon dill

  • 1/2 teaspoon garlic powder

  • Salt & pepper, to taste

Method:

  • First, drain and rinse your chickpeas, then mash in a bowl.

  • Now, add all of your ingredients to that bowl, season with salt and pepper to taste, and enjoy!

You can make this meal in less than 10 minutes and enjoy it as is or on a salad or a sandwich. It's seriously my favorite, you guys. Enjoy!
