Lemon Poppy Seed Scones

These scones are perfect if you love to bake but don’t want something overwhelmingly sweet. With only 1 ½ tablespoon of sugar, these scones are incredibly decadent and a perfect treat. Beware: you may eat all of these scones at once, they are just that good. Serve with jam for extra sweetness or butter for something a little more savory.


Ingredients:

  • 1 ¾ cups all-purpose flour

  • 1 ½ tablespoons sugar

  • ½ tablespoon baking powder

  • ½ teaspoon baking soda

  • ½ teaspoon salt

  • 1 tablespoon poppy seeds

  • Zest of one lemon

  • ¼ cup coconut oil or vegan butter (chilled)

  • ¾ cup non-dairy milk

  • Juice of ½ a lemon

Tools:

  • Large-sized bowl

  • Cooling rack

  • Baking sheet

  • Rolling pin

  • Parchment paper

Method:

  • Preheat oven to 400°

  • Combine all dry ingredients, including the lemon zest, then cut in the chilled coconut oil or butter (you should have some clumps, clumps are good); your mix should look kind of like breadcrumbs.

  • Add the milk and lemon juice, then use a fork to combine the ingredients, do not over mix your ingredients. Once the mix is just combined, you will turn it out onto a floured countertop to knead.

  • Knead your mix about 10 times, and then roll it out until it is about 1” thick, cut into rustic triangles.

  • Lay your scones onto a parchment paper-lined baking sheet and bake for 10 minutes.

  • Serve immediately!
