Simple Winter Pantry Friendly Recipes

All vegan, all easy, all using pantry staples!
Winter is rolling in and we all want something that is tasty, easy to make, and that will warm our homes and hearts right on up. Pantry friendly meals are my go-to’s all winter long because I almost always have the ingredients on hand and can use up all of my veggies that are going old. Thus, for the sake of simplicity and lack of food-waste I give you these super simple, all vegan, pantry friendly recipes & ideas that will serve you all winter long!
1. Grain & Bean Bowls Grain & bean bowls are the easiest, vegan, pantry friendly meals. I always have these ingredients on hand and there are so many different varieties of each meal that you can never go wrong! Here are some quick & easy examples:
Black Beans & Rice
Grab a can of black beans and a cup of rice, cook both according to directions & taste preferences. Top with chopped onion, tomato, and avocado to add some freshness to this hearty meal!
Roasted Chickpea Buddha Bowl
Grab your chickpeas & a cup of quinoa, cook both according to directions & taste preferences (I roast or air-fry my chickpeas). Then, throw in whatever veggies you have to a steamer, steam, and add some tahini on top! So simple and delicious. Now, remember, you can make grain and bean bowls with any grains, beans, sauces, and veggies you have. So, go wild! These bowls are such a staple in any vegan diet, you can’t go wrong with hearty bowls.
2. Banana & Apple Bread Do you frequently have mealy apples or old bananas that you would otherwise throw away? Now is your chance to make ultra-delicious apple bread and banana bread. Both of the recipes I am about to share are chock full of pantry staples & you can easily substitute items you don’t have (no pecans, whatever, no wheat flour, just use white, etc). Banana bread and apple bread are such delicious winter staples, so why not make both!
Here is my favorite banana bread recipe, & here is my favorite apple bread recipe. Both are vegan, super easy to make, and ultra-delicious! They’ll definitely become staples for your winter and fall baking go-to recipes.
3. Baked Pastas & Other Casseroles Baked pasta & casseroles are a simple, hearty, go-to mean to feed the entire family. You can go as simple as doing a quick baked mac and cheese with broccoli or you could do something like my personal favorite, creamy pasta & Brussels sprouts!
One of my personal favorite baked dishes is a kind of vegan shepherds pie, but with any of my veggies that are going bad. Here’s how I make my vegan shepherds pie:
Mash some potatoes and set aside. In a very large skillet grab whatever veggies you have that need to be used; I typically use onion, garlic, frozen corn, Brussels sprouts, & broccoli, but I have even used green beans, snow peas, cauliflower, or whatever else I had on hand! Par-cook your veggies using garlic powder, onion, pepper, and liquid aminos. Put your veggies in a casserole dish, top with mashed potatoes, and sprinkle vegan cheese on top if you have it. There ya go — a simple, hearty, easy meal to feed the family!
Having pantry friendly meals and meal ideas are a staple in any household to be sure that you can make great, healthy meals any day of the week. Being able to cook even when you are exhausted is a definite tool for success, instead of snacking on whatever chips or old snacks you have on hand, just whip up one of these recipes real quick and have at it. Grain bowls, for example, take about 20 minutes to make and are absolutely delicious — meanwhile, you can prep those bread recipes in 20 mins and have bread in 45!
