Vegan "Egg" w/ Split Mung Beans | Moong Dal
Just Egg is a super incredible vegan egg-like product that you can buy at most stores and make vegan omelets, frittatas, and quiche out of. Pretty much anything you can do with scrambled eggs you can do with Just Egg. Here's the catch, it's pricey! Well, it's a good thing we've learned how to make a version of vegan "egg" out of split mung beans (moong dal) and a couple of extra ingredients that are easy to get your hands on. Or, order online - we're on the internet, nobody's judging (I've even left you the links).
Anyways, I know most cookbook blogs have a huge intro where you hear somebody's life story but that ain't my style. Instead, here's a dope recipe.
1 cup moong dal
1/2 tsp salt
3/4 tsp kala namak (Indian sulfur salt)
1/4 tsp garlic powder
1/4 tsp onion powder
1/8 tsp black pepper
1/4 tsp turmeric
1 tsp oil
1 to 1 1/4 cup non-dairy milk (I use oat)
Add all of the above ingredients into a large mason jar and blend using an immersion blender, then cook as you would cook a regular egg omelet. I haven't tried this as scrambled eggs but I'm sure it would be delicious.
While your vegan "egg" cooks, check the bottom to see if it is browning and ready to flip, once you see bubbles appear up top and the bottom looks pretty brown, flip it over, add your [pre-cooked] filling, and fold like any old omelet. It's super delicious!
You can also use a cast-iron pan and make this into a frittata by cooking some delicious veggies and then filling the pan with your vegan "egg" and veggie mix.
